The catfish recipe was so quick and easy, but light and packed in a lot of flavor. I love Cajun seasonings! i found the recipe in one of my favorite cookbooks...EatingWell on a Budget. I have a feeling I have talked about this one before...but it is really that good. This is the only cookbook that I've really found that includes recipes that are quick, healthy, and inexpensive. Do you know any other cookbooks that cover all three? I find a lot that can fit in two out of three of those categories, but this is the only one I know that is three for three!

ReplyDeleteEvery time I hear catfish, I am reminded of the time when my cousins daughter caught a catch fish at my aunts lake house, and insisted on keeping it alive to show her dad who was coming up the next day.
ReplyDeleteWe kept it in a bathtub, it swam around. Her dad came and said "Kimberly, great job on that catch!" And then we all went downstairs and watched him take the catfish to a tree, nailing its head to the tree, and then skinned it, all in the blink of an eye!
But I digress, your dinner looks delicious!
I don't cook fish often enough - this dish looks great and makes me think I should be cooking it way more often!
ReplyDeleteWell, I don't think I've ever seen catfish in Australia, and okra is pretty hard to come by, but golly golly this looks tasty! I'd happily eat just the greens and the cornbread forever and ever....

ReplyDeleteOoh, great tip on the website. I will check that out. I have never ventured into the world of fish (besides shrimp and scallops) but I am thinking it's time. I was going to start with Basa, is that similar to catfish?
ReplyDeleteThis reminds me of my sweet grandmother. She was born and raised in Texas, and she makes the best catfish and okra. I love that this recipe is healthy too!
