Our reception site graciously agreed to make one of my own cocktail recipes to serve at our wedding. I say "one of my" with some poetic license, because I think this is actually the only cocktail I ever make. As a bellini, it was perfect for our brunch wedding. Also, the color sort of matched the bridesmaid dresses, and hey, if you cannot make your sister match a drink on your wedding day, when can you?
But this is a perfect drink for a summer brunch: tart, sweet, and fizzy. I adapted this recipe from Giada's Kitchen, by Giada DeLaurentis, to make it a little more seasonally appropriate.
1 cup ice
1 and 1/2 cups Simple Syrup
2 cups Pomegranate Blueberry Juice (such as Pom brand)
1 (750 ml) bottle Prosecco, chilled
1/2 cup blueberries, for garnish
Combine the first four ingredients well. Use a pretty glass pitcher so you can show it off. It's such a pretty color! Sprinkle in a few blueberries in each glass. They float, and look gorgeous!
Now I am in the mood for brunch!

ReplyDeleteI really love raspberries. Have you ever experimented with crushed fruit instead of juice, and then straining it? Just curious.
