"S'mores" Fudge

Here's a fun way to take a favorite summer flavor with you into fall.  What's more -- this is so quick to make!  The generous addition of marshmallows and graham cracker really lightens things up a bit, and keeps this fudge from being as cloying as some of the others out there.  This is great to share!  I brought some in to school today for the teachers for the first day of school, and brought home an extra container.

"S'mores" Fudge
yields 48 small pieces
adapted slightly from Taste of Home Comfort Food Diet Cookbook

1 1/3 cups semisweet chocolate chips
2/3 cup fat free sweetened condensed milk
1 tsp vanilla bean paste
1 1/3 cup miniature marshmallows
2 whole sheets of graham crackers, broken into bite-sized piece

1. Line an 8 x 8  pan with aluminum foil.
 2. In a medium saucepan over medium heat, melt the chocolate chips with the fat free sweetened condensed milk.  Cook and stir until there are no lumps.
3. Allow the mixture to cool for two minutes.
4. Stir in vanilla bean paste.
5. Fold in the mini-marshmallows and the graham cracker pieces.
6. Spread the mixture into the prepared pan.
7. Cool in the refrigerator for at least one hour before cutting into small pieces.

  1. I love every kind of fudge, and this one looks fantastic!!

  2. I'm so weak for chocolate desserts, and this fudge is especially irresistible. There is condensed milk in it? Wow then even better... looks yummy! :-)

  3. I love fudge! This is a great idea to combine with s'mores!

  4. Oh dear, this would be the death of me. Seriously, I bet I would make myself sick devouring way too much of this fudge. It looks divine!

  5. I seriously swoon over s'mores. I would love some of this right now!

  6. Oh my gosh, this looks divine! S'mores are my FAVORITE!
